On this post I will show your how to make simple veggie dishes with tons of flavor. The first recipe is a beet salad. Ingredients: 3(15 oz) cans of baby beets, 2 T raspberry vinegar, 3 T olive oil, 1/2 cup small diced onion, 1 1/2 t salt, 1/2 t black pepper, 2 oranges zested and segmented Directions: drain beets dice into 1/2 inch cubes. place in a bowl and add the vinegar, orange juice, oil, salt, and pepper. Zest and segment the oranges and add to the bowl mix well serve cold or a room temperature. (Ina Garten) This next recipe is a broccoli salad: ingredients: 1 pound of broccoli, 2 T olive oil, 1/2 t salt, 1/4 t pepper, 1/3 cup panko bread crumbs, 1/4 cup parmesan Preheat the oven to 425. Cut the broccoli into bite sized pieces. Place in a bowl and toss with the olive oil, garlic, salt, and pepper. Set aside. Spread the bread crumbs into a metal cake pan place in the oven for 2 minutes until browned. Toss into the broccoli mixture place in the oven for 8 to 10 minutes until broccoli is cooked toss with cheese and serve.
